My mum used to bake apple strudel on a commercial level when I was growing up, distributing them to popular cafes, markets and small businesses. We would hand peel all of our Granny Smith apples, delicately combining them with cinnamon and sugar, enveloped in a delicate and flaky crust sprinkled generously with icing sugar.
